Low Fat Winter Warmer – Spicy Sweet Potato & Lentil Soup

What you Need:
- 100g Red Lentils (no need to soak)
- 1 onion chopped
- knob of butter
- 1 garlic clove chopped
- 2 tbsp curry paste
- 450g sweet potatoes peeled and cubed
- 1.2 (2pt) hot veg stock
- 142ml natural yogurt

Method:
Cook the lentils in boiling water for 15mins. Cook Onion in butter for 8 mins until soft. Stir in the garlic, curry paste and cubed potatoes. Cook for ve mins stirring. Drain lentils. Add to the potatoes with the stock and cook for 15 mins. Blitz in a blender. Return to pan and season to taste. Swirl in the yoghurt.

Only 4grms fat per serving!
