Low Fat Detox Lettuce Soup

INGREDIENTS

- 1 oz Butter
- 1 Onion chopped
- 2  Medium potatoes (peeled and chopped)
- 1 garlic clove
- 450ml vegetable stock
- 2 Fresh Organic Lettuces finely sliced
- 225ml low fat milk
- A little nutmeg
- Double cream and snipped chives to serve

Per serving: 71 Kcalories, fat 4g, fiber 1g, sugar 0, salt 0.3g

HOW TO

Melt the butter in a large casserole with a lid then stir in onion, potato and garlic. Add the stock, season and simmer for 20 mins, covered, until the potato is tender.

Add the lettuce and cook, covered, for 3-4 mins, until the stock returns to the boil and the lettuces are semi-wilted.

Liquidise, then return to the pan with the milk.  Season add a pinch of nutmeg and serve with a swirl of cream and sprinkle with chives.
