Recipe of the Week! – Low Fat Falafel Pittas

What you need

- 2×400g can chickpeas, drained
- 1 Small onion chopped
- 2 carrots chopped
- 1 large garlic clove chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- small handfull parsley sprigs
- oil for brushing
- 6 pitta breads
- crispy lettuce
- cucumber slices
- natural yogurt to serve.

How to Make
Preheat grill to medium. Put the chickpeas into food processor with the onion, carrots, garlic, coriander, cumin, parsley, salt and pepper. Whizz briefly. Shape mixture into six round cakes. Carefully place falafels on grill pan lined with foil. Brush with a little oil. Grill for 5 mins each side. Meanwhile toast pittas and tear lettuce into strips. Stuff hot falafels into pitta with lettuce, a few slices of cucumber and a drizzel of natural yogurt.  Only 4 g Fat!
