Recipe of the Week! Low Fat Chunky Beetroot Soup

What you Need:
- 2 Large raw beetroot
- 2 large peeled carrots
- 2 celery sticks
- 2 garlic cloves
- 4 tomatoes skinned
- 50g butter
- 1 onion thinly sliced
- 3pts Veg stock
- Sprig of parsley
- 1 bay leaf
- 2 cloves
