The second most cultivated grain in the world is a powerhouse of nutrients, which we are losing out on when choose white, boil in the bag rice or only ever have it with our Indian or Chinese take away. Rice is a versatile store cupboard essential that is tasty and economical.

What you Need:
- 2 Large raw beetroot
- 2 large peeled carrots
- 2 celery sticks
- 2 garlic cloves
- 4 tomatoes skinned
- 50g butter
- 1 onion thinly sliced
- 3pts Veg stock
- Sprig of parsley
- 1 bay leaf
- 2 cloves

- 2×400g can chickpeas, drained
- 1 Small onion chopped
- 2 carrots chopped
- 1 large garlic clove chopped
- 1 tsp ground coriander
