Organic Kale is very high in beta carotene, vitamin C, vitamin K, lutein, zeaxanthin, and rich in calcium. Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical believed to have potent anti-cancer properties. To prepare organic kale as a side dish, add the kale to boiling water, cook for a few minutes to allow it to become tender, drain the hot water and rince in cold water. Add butter over the top and reheat. The greens can then be added to soups or served as a side dish.
