All the ingredients you need to make a beautiful Massaman Curry for 4 people! That’s €3 per portion!
Method: Start by gently stir frying the onions, after 2 minutes, add the rest of the chopped veg and then one clove of chopped garlic and a thumb of chopped ginger.
After 5 minutes, add the coconut milk and bring to a simmer, stirring constantly. Then add the Massaman paste and simmer for 10-15 minutes.
Add salt and pepper to taste and flour to thicken the sauce if desired. You can also add pineapple juice or brown rice syrup to sweeten the curry!
Serve over rice (included)
